Sauvignon Blanc 2017 – Sunbury Victoria


I thought you made alternative wines styles?  This is a Sav Blanc!

This is a Sauvignon Blanc fermented on skins.  This simply means we’ve made it a bit like a red wine.   Rather than running off the fresh pressed juice and fermenting only that, we crushed the grapes then put everything into the tank, skins and all and let it do its thing.

The result is a wine that is full of texture in the mouth, with ginger, elderflower, lemongrass, and white grapefruit aromatics that gently give way to more traditionally Savvy aromas.

Great with Asian and spicy food, although seafood is its fave partner in crime.

Product Description

A fancy new harvester means a better quality pick in 2017. More intense than 2016 and closer in style to the 2015 release, this is a looking lovely. Picked at night then warmed up over 2 days for a wild ferment in tank. Fermented to dry in about 7 days. Left for 128 days with no plunging or interference, the wine is protected from oxygen with a layer of Co2. The wine is then racked on a moon day, with no pressing from the skins, lightly filtered and bottled.

Although not designed to age we have seen similar examples form the Loire that have aged beautifully for up to 6-8 years.
