				<content:encoded><![CDATA[<p>With the early vintage in 2016 we managed to pick the Riesling and Gewurtz together so we could co-ferment. The Moscato come 2 weeks later at perfect ripeness. Vinified in small stainless tanks with a wild fermentation and left on fluffy lees for 2 months with battonage once a week.</p>
<p>Blended together with 48% Riesling, 40% Moscato Giallo and 12% Gewurz, the wine is stabilised and filtered before bottling. Minimal So2 added at bottling.</p>

				<content:encoded><![CDATA[<p>Destemmed and lightly crushed into stainless steel tank, within 2 days a wild ferment started where it fermented to dry in about 7 days. Left for 108 days with no plunging or interference, the wine is protected from oxygen with a layer of Co2. The wine is then racked on a moon day, with no pressing from the skins, lightly filtered and bottled.</p>
<p>Although not designed to age we have seen similar examples form the Loire that have aged beautifully for up to 6-8 years.</p>

				<content:encoded><![CDATA[<p>Handpicked, destemmed and crushed into open top fermenters for a wild fermentation. Once dry, it was plunged twice a day for a week, then once a day for 40 days until basket pressed into two year old French oak, 16% new. </p>
<p>14 Months in oak, 2 in tank before bottling unfiltered and unfined.</p>

				<content:encoded><![CDATA[<p>Hailing from the hallowed area of North East Italy, Nebbiolo is responsible for the some of Italy&#8217;s most expensive and well known wines. Nebbiolo is a unique wine that reflects the site on which it was grown and Heathcote with its rich volcanic red soils and warm dry climate produce a unique richly perfumed Nebbiolo wine.</p>
<p>The 2013 release is a Cuvee from two sites in Heathcote approx. 6km apart. A 50/50 cuvee from the Willoughby Bridge and the Camelback vineyards this was wild fermented in open top fermenters, gently plunged and left on skins between 55 and 65 days. The use of 3 to 5 year old oak for 14 months ensures no additional oak tannins.  The tannins are firmer than 2012 and it is already drinking well however it will only get better over the next 5 years.  As such we highly recommend decanting, Nebbiolo loves a bit of air.</p>

<p>With a nod to those pioneers this is our Australian Super T Blend. All wild fermented and bottled unfiltered, this wine highlights the juiciness of Heathcote Sangiovese and tempers it with some classy elegance from the cooler Sunbury vineyard Cab and Merlot.</p>
